Allergens and dietary requirements
Allergen information is part of the order, not an afterthought. This page lists the fourteen declarable allergens, how they are labelled, what we can and cannot guarantee in a shared kitchen, and how to declare a requirement.

The 14 declarable allergens
Every dish on our menu carries its allergens. These are the fourteen substances that must be declared:
- Cereals containing gluten — wheat, rye, barley, oats, spelt, kamut
- Crustaceans — prawns, crab, lobster, langoustine
- Eggs
- Fish
- Peanuts
- Soybeans
- Milk, including lactose
- Nuts — almonds, hazelnuts, walnuts, cashews, pecans, Brazil nuts, pistachios, macadamias
- Celery and celeriac
- Mustard
- Sesame seeds
- Sulphur dioxide and sulphites above 10 mg/kg or 10 mg/l
- Lupin
- Molluscs — mussels, oysters, squid, snails
What we cannot guarantee
All dishes may contain, or come into contact with, common allergens (gluten, crustaceans, eggs, fish, peanuts, soy, milk, nuts, celery, mustard, sesame, sulphites, lupin, molluscs). Full allergen and ingredient information is available on request for every item. Please state any allergy or dietary requirement with your order. Consuming raw or undercooked meat, poultry, seafood, shellfish, or eggs may increase the risk of foodborne illness.
Our kitchens handle all fourteen allergens. We take cross-contact seriously — separate prep, separate packing, labelled containers — but we do not operate allergen-free facilities, and we will not tell you we do. If an allergy is severe, tell us: the chef will talk it through with you before the order is confirmed, and will say honestly if we cannot cover it safely.
How to declare an allergy or a diet
State it with the order — not after. Every dish on the request page has a note field, and the request itself has a free-text field for anything that applies to the whole order. Crew meals, passenger meals and separate dietary trays all go on the same request.
Halal, kosher, vegan, vegetarian, gluten-free, low-sodium and medically restricted diets are handled the same way: tell us what is needed and for how many, and the chef confirms what is achievable at that airport, at that hour.
Labelling on board
Each container is labelled with the dish name and its allergens, so the label travels with the food and reaches whoever serves it in the cabin. Full ingredient information for any item is available on request before the order is confirmed.
If something is wrong with an order
Contact us immediately, before service if at all possible. Food safety takes priority over everything else on the order.
